Bac xiu
Bac xiu is a coffee and milk drink, containing more milk than coffee. The term "bac xiu" is derived from Cantonese and was widely used by Chinese people in Saigon's trade district, Cho Lon, at the time. Bac xiu is a cocktail that combines three cultures: Chinese, French, and Vietnamese. During the French colonial period in Vietnam, Chinese immigrants residing in Saigon originated this cuisine. Black and milk coffee were once avoided by women and children due to their harsh flavor and difficulty to drink. As a result, the Chinese used milk instead of coffee, which let the bitter flavor of coffee disappear, and Bac xiu was created.
Egg Coffee
Mr. Nguyen Van Giang founded Giang Cafe, where the first Egg Coffee was born. The genesis of this drink may be traced back to Mr. Giang's time as a bartender at the 5-star Sofitel Metropole Hanoi hotel. When there was a shortage of fresh milk for coffee, he considered using eggs to make it. This creative swap results in a dark yellow cream over a coffee foundation, intertwined with the harsh and fatty flavors of eggs and the sweetness of honey.
