Thang Co is a traditional dish of the HMong people, originating from the mountains of Ha Giang and gradually becoming popular with all ethnic minorities in the northern mountains. Thang Co is a blend of meat and animal organs that are cleansed, cooked, then marinated in 12 traditional spices including cardamom, star anise, cinnamon, lemongrass, ginger, and many others of differences amongst highland ethnic groupings. The Thang Co plant is the final spice, and it is cooked for hours to absorb the spices. Customer can season their meals with chili, pepper, or salt. Thang Co pairs well with Men Men, as do grilled corn cakes and, of course, the fragrant corn wine.
